Mike Senior’s Pork Tenderloin with Plum Sauce

  • 3 lb Pork tenderloin


  • 2 cups Sherry
  • 6 cloves Garlic (minced)
  • 1 tbsp Dry mustard
  • 1 cup Soy Sauce
  • 1 tsp Salt
  • 1 tsp Pepper

Plum Sauce

  • 1 cup Sherry
  • 10 oz Plum preserves
  • 3 tbsp Honey


  • Mix all the marinade ingredients together in a sealed container and add pork tenderloin. Refrigerate for 2 hours. Shake/turn over a few times over this period to make sure marinade is evenly distributed
  • On the grill, turn on one burner on medium-high on one side of the grill. On the opposite side of the grill, place a layer of aluminum foil and then place the tenderloin on top. There should not be any burner on beneath the tenderloin–only on the opposite side of the grill
  • While the pork is cooking, mix the ingredients for the plum sauce in a saucepan on medium-low heat. Do not let sauce get to a boil.
  • Let the pork cook slowly until the the internal temperature reaches 145-degrees.
  • Take off and lest rest 3 minutes
  • Serve hot with sauce on the side
